THE VINEYARD

 

Production : 35000 botlles

Area plantead: 5.8 hectares

Soil: on different lands, gravel, deep gravel stones, clay-gravel.

Grape variety: 70% Merlot 20% Cabernet-Sauvignon 10% Cabernet Franc

harvesting: by hand and machine

Age of vines: 40 to 70years

Pruning method: Cabernets Guyot double , Merlot Guyot simple

Control of the vineyard: controlled cut stripping, green harvesting

Vinification: traditional, with regular pumping over, temperature control and 3 weeks maceration period

Maturing: 12 months in French oak barrels (1/4 of renewall)

Cellaring: 8 to 12 years


TASTING NOTES


Elegant fine and aromatic, lingering, ripe, red fruit jam. Good wide presence. Wood thin and light. Matches with read meat poultry and chocolate desserts.
